ZOMBIES!!!!

Commitment is hard sometimes but losing ones self is easy…Why is that? I think for me it’s because I got promoted at my job and been so excited about it and just extremely focus on it that I lost my committed mood for baking and blogging. But last week when I whipped up some cupcakes my boyfriend pointed out, how happy I am when I bake. When he said that I realized “wow, things are just falling into place but I’m losing myself to this promotion”, as excited I am about my new position, I need to NOT let this new job totally consuming me. Now I’m back to blogging and baking and thinking about my next New Year’s resolution.


So my favorite holiday pass and I like to share what I did for my boyfriends, friends and myself. CHECK IT OUT:

I was a Zombie Housewife.

Apple Cupcakes

Makes 12 cupcakes

Ingredients
3 tablespoons butter, room temperature
1/2 cup sugar
1/4 cup + 2 tablespoons brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 cup + 2 tablespoons all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce
1 cup Granny Smith apples, diced

AND 1 cup LOVE!

Method
Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.

Bake for 15-18 minutes, until the muffins spring back when lightly pressed and a toothpick inserted into the center comes out clean

PUMPKIN CHOCOLATE cake

Ingredients

1/4 cup canola oil, plus more for greasing
1 cup whole wheat pastry flour
1/3 cup cocoa powder
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
2 eggs
1 (15-ounce) can pumpkin purée
1 teaspoon vanilla extract
Powdered sugar, for dusting (optional)

Method

Preheat oven to 350°F. Grease an (8-inch) square baking pan with oil and set aside

Bake until the cakes pulls away from the sides of the pan and a toothpick inserted in the center comes out clean, 40-50minutes.

This is a cake that I made into cupcakes :-)


FOR THE HONEY FROSTING

1/2 cup (1 stick) unsalted butter, very soft

1 bar (8 ounces) regular (or reduced-fat) cream cheese, very soft

1/4 cup honey

make sure you taste the Honey if not add more honey to it.

  3. I didn't know you got a promotion! Congrats my dear! Sometimes we get caught up with what's going on but luckily, you caught yourself before you completely lost yourself. I love the costume idea, it was adorabe! Even if you were a zombie it was very cute. Hun, just do what you love to do and the rest will follow like it seems to be doing : )
